Spring Camping Recipe: Skirt Steak Tacos

Tacos are an easy way to feed your crew at the campground whether you choose to make something simple to spice it up with this street taco recipe. The skirt steak taco recipe below is an excellent way to upgrade your dinners and ensure everyone gets refueled at the end of the day.

  • 2 lbs of beef skirt steak
  • 12 oz beer, your choice
  • 1/4 cup lime juice
  • 3 TBSP olive oil
  • 8 green onions
  • 1-1/4 teaspoons salt, divided
  • 3/4 teaspoon pepper, divided
  • Corn tortillas
  • Minced fresh cilantro
  • 1 whole lime


  1. Using a meat mallet, tenderize the steaks thoroughly.
  2. In a large bowl, combine the beer, lime juice, and 2 TBSP oil.
  3. Add steaks, turning to coat completely and refrigerator for an hour.
  4. Wash the onions and dry with a paper towel.
  5. Chop the whites off and leave the greens whole. Drizzle with oil and season with salt and pepper.
  6. Heat your grill to a medium heat.
  7. Once the meat has set, drain and discard the marinade. Season the steaks with salt and pepper.
  8. Using a paper towel coated in oil and a pair of tongs, grease the grill rack before adding the steaks and onions to the grill.
  9. Cover and cook to desired doneness. 2-4 minutes per side for both the steaks and the onions is ideal for medium-rare steaks.
  10. Remove the steak from the heat and slice into strips.
  11. Serve on a corn tortilla, topped with grilled onions, shredded cilantro, and lime wedges.
